Ingredients for 8 servings:

  • 1 chicken (organic)
  • 3 carrots
  • 1 celeriac
  • 1 stalk(s) leek
  • 3 roots of parsley
  • 2 onions
  • Ginger
  • turmeric
  • Parsley
  • Soy sauce

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chicken soup, for exhaustion, lack of motivation, to strengthen the immune system and after illness

Bring about 1 liter of cold water with a little turmeric to a boil in a pot. Add a whole organic chicken or poulard to a boil. Simmer for a few minutes; discard all the water, clean the pot, and rinse the meat with hot water (this saves you having to skim the skin). In the clean pot, fry the onions until translucent, add the roughly chopped carrots, celery, and parsley root, and fry. Add the roughly chopped leek and two slices of ginger, and continue frying. Add 1.5 liters of cold water, season with soy sauce, and mix well. Add the chicken and parsley and fill with hot water until completely covered. Simmer for at least 1.5 hours, then remove the chicken, skin, and remove the meat, and set aside. Return the carcass and skin to the pot and simmer for another 1-2 hours. Then strain the soup, season with soy sauce, and serve with the meat, carrots, and celery pieces. It will keep for 3-4 days if refrigerated.
