Basic vegetable broth recipe

Ingredients for 12 servings:

  • 2 tbsp oil
  • 150 g onion(s), finely chopped
  • 150 g leek, finely chopped
  • 150 g carrot(s), finely chopped
  • 4 stalk(s) celery, finely chopped
  • 100 g fennel, finely chopped
  • 100 g tomato(s), finely chopped
  • 2 ½ liters of water
  • 1 bunch of herbs (bouquet garni)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Basis for many other dishes

Heat the oil in a saucepan and sauté the onions and leeks over low heat for 5 minutes until softened. Add the remaining vegetables and sauté for 10 minutes. Then add the water and bouquet garni to the pan. Bring to a boil and simmer for 20 minutes. Strain the broth and let it cool. Use or consume soon, or freeze in portions. It can be stored in the freezer for up to 3 months.
