Alsatian-style toast, super easy

Preheat oven to 230°C (top/bottom heat). Halve and slice onions. Flatten the toast with a rolling pin or a cutting board. Place the flattened toast on a baking tray lined with backpacker’s cheese and place in the oven for 4-5 minutes. Meanwhile, mix the cream cheese with the crème fraîche and the milk with a fork and season with a pinch of salt and pepper. Immediately after baking, stack the hot toast and press down firmly, e.g., with a board. Spread the toast slices with the cream mixture and top with onion slices. Using a spatula, press the onion slices into the cream mixture and then top with the bacon cubes. Press these down with the spatula as well. Finally, place the baking tray with the toast slices in the oven and bake for 12-14 minutes, until the edges of the toast are golden brown. For a real tarte flambée feeling, serve the slices on a wooden board.
