Flan with prunes

Ingredients for 6 servings:

  • ½ liter whole milk
  • 6 eggs
  • 50 g flour
  • 100 g sugar
  • ½ bag(s) of vanilla sugar
  • Butter for the mold
  • 12 prunes, dried
  • 1 small jar of rum
  • Powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 45 minutes

Pit the prunes, halve them, and soak them in rum for at least 3 hours. Beat the eggs with the sugar and vanilla sugar until frothy, add the milk, and sift in the flour. This should form a very runny batter. Grease a pie dish with butter and pour in the mixture. Remove the prunes from the rum, drain on a paper towel, dust with powdered sugar and flour (to prevent them from sinking too much), and spread them evenly over the mixture. Place in an oven preheated to 180°C (top/bottom heat) and bake for about 30 minutes (use the knitting needle test!). It also tastes great with dried cherries marinated in cherry brandy. My friend’s boys always call it a pudding cake. THE FLOUR AMOUNT IS RIGHT!
