Flatbread with Bresso

Ingredients for 6 servings:

  • 300 g flour
  • 1 tsp salt
  • 20 g yeast
  • ⅛ liter of water, lukewarm
  • 150 g cream cheese (Bresso)
  • Water, salted
  • sesame
  • Herbs of Provence

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Put the flour and salt in a bowl. Mix the yeast with the lukewarm water and add it to the flour along with the Bresso. Mix everything with the dough hook of a hand mixer until you have a smooth dough. Or knead by hand. Cover and let rise for about 30 minutes (covered in the oven at 50°C). Knead the bread dough again on a lightly floured work surface and divide it into 6 portions. Shape each portion into a ball and then press it into a small, flat, round flatbread. Score the surfaces in diamond shapes with a sharp knife and brush with salted water. Sprinkle with sesame seeds or… and bake in a preheated oven at 200°C for about 25 minutes. Tip: Mix 2cl vegetable oil with 1 clove of garlic and after 10 minutes of baking, brush the flatbread with it and then continue baking.
