Ingredients for 8 servings:
- 2 flatbreads
- 1 jar of ajvar
- 700 g turkey meat
- 500 g tomatoes
- 500 g onion(s)
- 400 g red bell pepper(s)
- 1 lettuce (head)
- 150 g Cheddar cheese
- 150 ml sweet cream
- 10 Pepper, fresh, red and green
- 3 cloves garlic, crushed
- 3 tbsp tomato paste
- some water
- some oil
- Coriander powder
- cumin
- Salt
- pepper
- Paprika powder
- chili powder
Instructions
Working time approx. 50 minutes; Total time approx. 50 minutes
Cut 1 tomato into thin slices, halve 1 onion and slice into thin rings, wash a few lettuce leaves and slice into strips. Arrange on a plate. Dip: Cut the cheese into small cubes. Heat the cream and melt the cheese in it. Heat slowly, stirring frequently. Finely chop 4 bell peppers and add. Season with salt, pepper, and paprika. Meat filling: Cook the meat for 20 minutes with a little salt and pepper, then let cool. Separately chop the meat, remaining onions, bell peppers, remaining tomatoes, and 6 bell peppers. This is best done with a food processor, which also chops the meat easily. Heat oil in a large pan and brown the meat on all sides. Lightly season with salt, add the onions, garlic, and tomato paste, and sauté. Transfer everything to a medium-sized saucepan. Add the tomatoes and bell peppers and add a little water. Continue cooking the sauce for 15-25 minutes, until the liquid has evaporated. Stir frequently towards the end, otherwise it will burn. Finally, add chopped chili peppers. Season to taste with salt, pepper, paprika, chili powder, coriander, and cumin. The rest of the preparation can be done at the table, as desired: Quarter the flatbreads and slice open all the way to the edges. Spread the base with ajvar (if you like it spicier). Fill with the meat filling, onions, tomatoes, and lettuce, and pour a few spoonfuls of cheese sauce over the top.
