is quick and tasty

Place the spelt flour, flaxseed, and salt in a bowl, creating a well in the center. Add the sourdough and the risen yeast (mix the yeast with warm water and a pinch of sugar). Mix everything together and then knead. Knead for about 5-10 minutes. If the dough is a bit sticky, add a little more flour. Let the dough rise in a warm place for 20-30 minutes. Knead it again and then transfer it to a covered bread pan. Let the dough rise for another 15-20 minutes and then transfer the pan to a hot oven. Bake the bread for about 1 hour at 200°C. After 45 minutes, remove the lid to allow the bread to brown nicely.
