Flaxseed buttermilk bread

Ingredients for 1 servings:

  • 300 g buttermilk
  • 1 cube of yeast
  • 50 g flaxseed
  • 100 g water
  • 250 g wheat
  • 250 g wheat flour (type 405 or 1050)
  • 1 ½ tsp salt
  • ½ tsp sugar
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Preparation in the TM 31

First, soak the flaxseed in 100 ml of water for 2 hours. Add the wheat grains to the mixing bowl and grind for 1 minute at speed 10. Add the remaining ingredients and the soaked flaxseed and knead for 3 minutes at bread speed until a dough forms. Then pour the dough into a greased loaf pan and let it rise for 30 minutes. Bake in a preheated oven at 200°C for 45 minutes.
