Ingredients for 4 servings:
- 400 g zucchini, cut into approx. 1 cm cubes
- 4 tomatoes, dried, cut into small cubes
- 6 black olives, pitted, quartered
- 1 shallot(s), finely chopped
- 1 garlic clove(s), finely chopped
- 50 ml white wine
- 1 handful of pine nuts, roasted
- 16 cherry tomatoes, fresh, good quality, halved
- salt and pepper
- 2 tbsp olive oil

Mediterranean zucchini vegetables, side dish
Sauté the zucchini cubes in olive oil in a pan for 2-3 minutes. Season with salt and pepper, remove from the pan, and set aside. Reduce the heat and sauté the shallot, garlic, rosemary, and sun-dried tomatoes in the remaining oil for 5 minutes. Then add the olives and cherry tomatoes, season with salt and pepper. Increase the heat slightly, deglaze with the wine, and reduce slightly. Now add the zucchini again, toss to coat, scatter the pine nuts over the top, and serve.
