Fluffiest banana pancakes

Ingredients for 2 servings:

  • 2 bananas
  • 4 m.-sized eggs
  • 130 ml buttermilk
  • 100 g oat flakes
  • 1 tsp baking powder
  • some cinnamon
  • possibly vanilla extract

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

no sugar, low carb

Grind the oats and mix with baking powder and cinnamon (cinnamon is optional, of course, vanilla extract works too, or both). Separate the eggs. Beat the egg whites until stiff and set aside. Whisk the egg yolks with buttermilk, then mash the bananas and stir in (this also works well in a stand mixer). Stir in the dry ingredients. Finally, fold in the stiffly beaten egg whites. Fry about 10 pancakes one after the other in coconut oil over medium heat (otherwise they’ll burn very quickly), for about 3 minutes on each side. They’ll be beautifully thick and fluffy.
