Fluffy and fresh meets crispy cheese

Ingredients for 5 servings:

  • 2 eggs, size M
  • 200 g flour
  • 50 ml carbonated mineral water
  • 1 packet of vanilla sugar
  • 100 g sugar
  • 1 pinch of salt
  • e.g. butter for frying
  • 2 heads of lettuce, various varieties
  • 1 m.-sized carrot(s)
  • ½ cucumber(s)
  • 4 tbsp oil
  • 3 tbsp table vinegar
  • 1 tbsp mustard, medium hot
  • 1 tbsp honey
  • 1 tsp salt
  • 200 g Brie(s) or Camembert, e.g. E.g. Le Rustique
  • ½ bag(s) of pretzels
  • 2 tbsp flour
  • 1 egg(s), size M

Working time approx. 1 hour 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes

For the pancake, separate the eggs and place each in two separate bowls. In one, beat the egg whites with a pinch of salt until stiff peaks form. In the other bowl, whisk the egg yolks with the water, milk, and sugar. Sift in the flour to avoid lumps. Carefully fold in the stiff peaks. Heat a little butter in a 20cm non-stick frying pan and wait until it sizzles gently. Then scoop out a large ladleful of batter, add it to the pan, and cook for about 4-5 minutes at medium heat. Once the underside is lightly browned, flip the pancake and cook for another 2-3 minutes. Preheat the oven to 180°C (fan/convection oven) and prepare a baking sheet lined with baking paper. For the topping, cut the cheese into bite-sized pieces. Whisk the egg and chop the pretzels very finely until they are almost powdery, but with a few larger pieces remaining. This is best done with a rolling pin or something similar. Now prepare a breading station with three plates. Put the flour in the first plate, the beaten egg in the second, and the crushed pretzels in the third plate. Now coat the cheese pieces in the individual components one by one. Start with the flour, then the eggs, and finally the breadcrumbs. Place the breaded cheese pieces on the baking sheet, leaving some space between them. Bake the cheese for about 10 minutes. If it starts to run dry, you can take it out of the oven earlier. For the salad, wash the lettuce heads, pat dry, and cut into strips. Place everything in a bowl. Wash the carrot and cucumber as well. Peel them if you like. Grate the vegetables into the salad using the coarse side of a grater. Combine all the ingredients for the dressing, stir or shake well, and then drizzle over the salad.
