Ingredients for 4 servings:
- 500 g quark
- 250 g flour
- 45 g sugar
- 150 ml milk
- 3 eggs
- 1 tsp vanilla extract or
- 1 sachet of vanilla sugar, then use less sugar
- 1 pinch of salt

simple, quick, without potatoes, curd pancakes
Mix all the ingredients together until you have a sticky, yet firm, batter. Let it rest for 10 minutes. Then fry in batches in hot oil (medium heat) until golden brown. My personal tip: The batter is quite firm. Simply add a tablespoonful of it to the hot pan, wait a moment, turn it over, and then flatten it with a spatula. It’s really easy and super quick. If you add more milk, the consistency will naturally thin out, allowing you to make large pancakes instead of compact little balls. The whole thing can then be eaten hot or cold with applesauce or other fruit, with sugar and cinnamon, or on its own.
