Foil fish with feta and tomatoes

Ingredients for 4 servings:

  • 4 portions of fish fillet(s), e.g. pangasius fillet
  • 2 lemons
  • 4 tomatoes
  • 1 pack of feta cheese
  • 1 bunch of parsley, or frozen parsley
  • 2 garlic cloves
  • Thyme, dried
  • salt and pepper
  • olive oil

Working time approx. 15 minutes; Total time approx. 15 minutes

Spread the fish fillets on four sufficiently large pieces of aluminum foil drizzled with oil, season with salt and pepper, rub each with half a crushed garlic clove, and drizzle with a little more olive oil. Squeeze half a lemon over each fish fillet and sprinkle the fish with chopped parsley. Slice the tomatoes and arrange them on top of the fish, crumble the feta over the tomatoes, and sprinkle with thyme. Fold the aluminum foil into parcels. Place the fish parcels on a baking sheet in the preheated oven and bake for about 25 minutes at 175°C (350°F). Serve with boiled potatoes.
