Ingredients

  • 11 g Dry yeast, or 0.5 fresh yeast
  • 500 g Wheat flour type 550
  • 150 g Brown sugar, finely ground
  • 2 Eggs

  • 1 pinch Ground cardamom or ground fennel;

  • 1 Egg yolk
  • 1 tbsp Milk

Instructions
 

  • Dissolve the yeast with a little sugar in the lukewarm milk. Put the flour with the remaining ingredients and spices in a bowl. Now add the yeast mixture.
  • Knead everything together well, by hand or with the kneading machine, etc .. For at least 10 minutes until the dough is no longer sticky and comes off the bowl well. Shape into a ball and place in a floured bowl, covered, and let rise for at least 30-60 minutes. Until it has at least doubled.
  • Divide the dough once in the middle, remove a little dough from each piece and put it to one side. Shape the rest of the dough into a ball and place on a baking sheet lined with baking paper. A boiled egg (with shell) is placed in the middle of each ball and pressed in a little. The handles for each basket are made from the dough that has been laid aside. For each handle, 2 strands are rolled, which are then overlapped on top of each other. They are then placed crosswise, over the egg and pressed down at the bottom.
  • Now cover the baskets again and let rise for 30 minutes. Preheat the oven to 180 ° C hot air! Whisk egg yolks with milk and as soon as the baskets have risen again, brush them with it. And pushed into the preheated oven.
  • Now bake for approx. 20-25 minutes at 180 ° C hot air. Since the dough is quite dark from the start, due to the brown sugar and the brushing with the egg yolk-milk mixture, it automatically becomes dark. I had it in for 20 minutes and another 5 minutes with the oven switched off. 😉 Take out and let cool down. I forgot to sprinkle some powdered sugar over it. 😉
  • Tip 6: The dough is actually intended for one piece, but the dough has risen so well ... so it became 2 large pieces. But you can also make small baskets out of it, per person, then reduce the baking time to 12-15 minutes.
