Fondant potatoes

Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 tbsp butter
  • 1 tbsp oil
  • 1 garlic clove(s)
  • 1 sprig(s) rosemary, fresh
  • 2 sprigs thyme, fresh
  • 100 ml vegetable broth, hot
  • 50 ml dry white wine
  • Salt
  • 1 bay leaf
  • 2 allspice berries

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

They are also called melted potatoes

Peel the potatoes and trim each end. Heat butter and oil in a pan and fry the potatoes until golden brown on all sides. Add the crushed garlic clove, rosemary sprig, and thyme to the frying fat. Then place the potatoes in an ovenproof dish. Pour in the broth and white wine. (If you like, you can also add the clarified butter.) Add the bay leaf and allspice berries, season with salt, and bake in the oven at 180°C for about 30-40 minutes, until the potatoes are nice and tender. These fondant potatoes are a great side dish to pan-fried meat or fish.
