Forest Walk in Mountain Park

- 2 Pc. Eggs
- 250 ml Cream
- 250 g Mascarpone
- Vanilla
- 100 g Sugar
- 2 cl Gin
- Pumpernickel
- Berry
- Walnuts
- Pears
- Red wine

- I made a gin cream for dessert. For this purpose, egg whites were made from two eggs. I mixed it in with whipped cream (250ml) and mascarpone (250g). A little vanilla and sugar (100g) shouldn’t be missing. Both, like the gin (2cl), are added depending on your taste. Of course you can also leave out the alcohol. But then it’s no longer gin cream.
- The finished cream is applied in layers. At the very bottom there was a crumbled pumpernicle, which was supposed to represent my forest floor, then a layer of cream, the berries, the caramelized walnuts. As a further component, I boiled pears in red wine and pickled them overnight. A piece of honeycomb honey from the direct beekeeper should be a sweet highlight on the plate, both in terms of taste and appearance with a golden yellow color.
