Frango Piri – Piri

Ingredients for 10 servings:

  • Oil, for frying
  • 1 large chicken, cut into 6 pieces
  • 2 onions, cut into rings
  • 6 tomatoes, chopped
  • 2 carrots, cut into sticks
  • 1 parsnip(s), cut into sticks
  • 1 stalk(s) cinnamon
  • salt and pepper
  • Chili powder, Piri-Piri
  • 1 large red bell pepper(s), cleaned and thinly sliced
  • 1 large yellow bell pepper(s), cleaned and thinly sliced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chicken with Piri-Piri

Heat the oil in a casserole dish. Brown the chicken pieces evenly, in batches if necessary. Add the onions, tomatoes, carrots, parsnips, cinnamon, salt and pepper, and 750ml water. Bring to a boil and stir in some piri-piri, then cover and simmer gently for 30 minutes. Add the peppers to the dish, replace the lid, and simmer for another 30 minutes, until the chicken and vegetables are tender. Transfer the chicken pieces and vegetables to a warmed serving dish with a slotted spoon and keep warm. Bring the cooking liquid to a brisk boil until it has reduced by about a third. Season to taste and add more piri-piri if necessary. Pour the sauce over the meat and vegetables, then serve.
