Ingredients for 24 servings:
- 12 slices of bacon
- 500 g minced meat, mixed
- 1 small onion(s)
- 1 egg(s)
- 30 g breadcrumbs
- 2 cloves garlic
- ½ tsp oregano
- ½ tsp basil
- ½ bunch parsley
- salt and pepper
- BBQ sauce
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Holstein style
Mix together all ingredients except the bacon. Halve the bacon slices crosswise and line a silicone mini muffin tin with two slices each, placed crosswise. Fill the tin with the minced meat mixture, press down lightly, and fold the bacon over the meat. Remove the balls from the tin and place seam-down on a wire rack. Place the rack on a baking tray lined with baking paper. During baking, the meatballs will lose quite a bit of liquid and fat, which shouldn’t drip into the oven. If you just place them on a baking tray, they’ll sit in their own fat and won’t look nearly as good. Bake in a preheated oven at 180°C (convection oven) for 20 minutes. The bacon should then be browned. Brush the meatballs with BBQ sauce and bake for another 10 minutes. The freakadellen are delicious hot or cold, but not hot or straight from the fridge.
