French crêpes

Ingredients for 4 servings:

  • 100 g flour
  • 1 pinch(s) of baking powder
  • 1 pinch of salt
  • 2 eggs
  • 125 ml milk
  • 125 ml water
  • 2 tbsp butter
  • margarine

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Mix the milk and water together. Stir in some liquid, eggs, and salt. Gradually add the sifted flour, baking powder, and remaining liquid, and mix everything into a fluffy batter. Melt the butter in the microwave and add it to the batter. Let the batter rest in the refrigerator for about 20 minutes. Melt a little margarine (do not use butter or oil) in a Teflon-coated pan (the pan should have low sides to make turning easier) and pour in about a ladleful of batter at a time. Reduce the heat to half and cook the crêpes for 2-3 minutes on each side. Check the browning occasionally. Turning is best done with a proper crêpe spatula. Fill the crêpes as desired and fold them together nicely.
