Ingredients for 3 servings:

  • 3 egg yolks
  • lemon juice
  • 200 ml oil (Livio, Mazola…)
  • 2 tbsp mustard
  • 70 ml buttermilk or water

Instructions

Working time approx. 8 minutes; Total time approx. 8 minutes

Whisk the egg yolks with lemon juice and mustard. While whisking continuously, slowly add the oil (like mayonnaise). Whisk in buttermilk (or water) until smooth. Season to taste with salt and pepper; you can also add a little Aromat or Fondor.
