Ingredients for 8 servings:

  • 5 stalk(s) leeks
  • 1 piece(s) butter
  • 1 stock cube (clear stock), e.g., from Maggi
  • Potato(s) in the same quantity as the leek
  • salt and pepper
  • lots of chervil
  • 1 cup crème fraîche

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Finely chop the washed leeks and braise them in butter until soft. Add the raw, washed potatoes and fill with water until everything is covered. Add 1 stock cube and season with salt and pepper. Bring to a boil and simmer for about 20 minutes. Purée with a hand blender. Add the crème fraîche and plenty of chervil, mix, and season to taste. Tip: North Sea crab or finely chopped Vienna sausages make a perfect topping.
