French Mouse Au Chocolat

- 200 g Chocolate 70% cocoa
- 200 ml Cream
- 4 Pc. Eggs
- 4 tbsp Sugar
- 1 pinch Salt
- 1. First, let the chocolate melt over a water bath. 2. In the meantime, the eggs are separated. 3. Beat the egg whites with a pinch of salt until stiff. The pinch of salt helps the egg whites to set. 4. Whip the cream firmly. 5. Mix the egg yolks with the sugar until frothy. 6. Make sure that the melted chocolate is lukewarm before it is processed further. 7. Stir the warm chocolate into the sugar and egg yolk mixture.
