Ingredients for 3 servings:
- 500 g sausage (Lyoner) or meat sausage or mortadella
- 1 m.-large onion(s), red
- 2 large spring onions, with green
- 2 stalk(s) Celery , not too big
- 2 small red bell peppers
- 1 tbsp, leveled vinegar (wine vinegar)
- 6 tbsp, leveled olive oil
- Salt
- pepper
Instructions

Cut the sausage into not-too-thick strips. Peel the red onion, halve it, and slice it. Wash the celery, spring onions, and bell peppers, deseeding and removing the skins. You can remove the green parts of the celery, but you don’t have to. Cut everything into slices or pieces. Combine everything in a large bowl and mix well. Mix together the vinegar, oil, salt, and pepper and pour over the salad. Mix well again, cover with cling film, and let it sit in the refrigerator for about 4 hours. This sausage salad will keep well chilled for about 2 days.
