French-style onion soup

Ingredients for 4 servings:

  • 500 g onion(s)
  • 2 cloves garlic
  • 40 g butter
  • Salt and pepper, black
  • 20 g flour
  • 1 liter meat broth
  • ¼ liter white wine
  • 100 g hard cheese, grated
  • 4 slices of white bread or toast

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Slice the onions into rings. Finely dice the garlic cloves. Heat the butter in a saucepan and fry the onions and garlic until light yellow. Dust with flour and sweat for 5 minutes, stirring constantly. Add the stock and white wine. Stir. Simmer on low heat for 20 minutes. Season with salt and pepper. Toast the crustless slices of white bread. Place in an ovenproof dish. Pour the soup over the bread and sprinkle with the grated cheese. Place immediately on the top rack of the preheated oven (230°C, Gas Mark 6) and bake until the cheese is golden brown. Remove the soup from the oven and serve immediately.
