Mandarin muffins

Ingredients for 12 servings:

  • 1 can/n tangerine(s)
  • 175 g butter
  • 150 g brown sugar
  • 3 packets of vanilla sugar (Bourbon)
  • 1 pinch of salt
  • 3 eggs
  • 4 tbsp orange liqueur
  • 175 g flour
  • 1 pack of pudding powder, vanilla
  • 2 tsp baking powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Drain the mandarins well in a sieve. Place the butter, sugar, vanilla sugar, and a pinch of salt in a mixing bowl and beat until fluffy using the whisk of a hand mixer. Gradually beat in the eggs, one at a time, and continue beating until the sugar has dissolved. Then stir in the orange liqueur. Preheat the oven to 175°C (350°F). Mix the flour, vanilla pudding powder, and baking powder in a second bowl and fold into the egg mixture. Place paper baking cups in a muffin tin and fill with the batter. Divide the mandarins among the cups and sprinkle with the almond flakes. Bake the muffins in the oven for 25 minutes. Once cooled, sprinkle with powdered sugar.
