Ingredients for 4 servings:
- 800 g lamb (rack of lamb)
- salt and pepper
- 3 shallots
- 1 bunch parsley, flat
- Thyme
- 50 g breadcrumbs
- 50 g Parmesan, grated
- 60 g butter, soft
- 1 egg(s)
- 1 tbsp mustard, hot
- rosemary
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash the meat and pat dry. Carefully remove the rind and scrape off the ribs. Season the meat with pepper. Chop the shallots very finely. Wash the herbs, pat dry, and finely chop. Mix the white breadcrumbs, Parmesan cheese, shallots, herbs, butter, and egg. Brown the meat in hot oil. Season with salt and continue cooking in the preheated oven at 200°C for about 10 minutes. Remove the meat. Brush with mustard. Spread the herb mixture on top. Then bake for 10 minutes at 220°C.
