Fresh grain porridge with vanilla yogurt, apples and nuts

Ingredients for 1 servings:

  • 50 g oats
  • 60 g vanilla yogurt, possibly vegan
  • 50 g low-fat quark or vegan quark substitute
  • ¼ organic lemon(s)
  • 80 g orange(s)
  • 15 g pear(s)
  • 50 g banana(s)
  • 30 g apple
  • 6 g walnuts
  • 6 g pumpkin seeds
  • 50 g fruit, e.g. berries
  • Vanilla powder, if desired

Instructions

Working time approx. 15 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 15 minutes

Grind the oats in a high-performance blender, grain mill, or hand mill. Mix the ground oats with a little cold tap water. The porridge should be thoroughly soaked and not too runny. Let the mixed porridge stand overnight at room temperature. The next morning, add the vanilla yogurt and quark to the porridge and stir well. Squeeze the lemon and add the juice to the porridge. Dice the orange and pear. Mash the banana. Grate the apple with the peel. Add the fruit, nuts, and pumpkin seeds to the porridge and stir everything well again. Top with some fresh fruit and, if desired, vanilla powder. Tip: It’s best to make 4-8 times the amount at once, as the porridge will keep in the refrigerator for 3-4 days, saving you a lot of time. Plus, you don’t have to work with such small quantities.
