Fresh leaf spinach with garlic and olive oil

Ingredients for 4 servings:

  • 500 g leaf spinach
  • 1 lemon(s), juice
  • 1 garlic clove(s)
  • 4 tbsp olive oil
  • salt and pepper
  • Nutmeg, optional

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 2 minutes; Total time approx. 1 hour 7 minutes

perfect starter

Wash the spinach leaves and blanch them in boiling salted water for 1-2 minutes. Immediately plunge them into ice water. Shape the spinach into thumb-sized sausages with your hands, squeeze the excess water, and place them in a shallow bowl. Drizzle everything with lemon juice, scatter the grated or crushed garlic over the leaves, and drizzle with plenty of good olive oil. Season with salt and pepper, and sprinkle with nutmeg to taste. Let it sit in the refrigerator for an hour. I like to serve the spinach with freshly toasted ciabatta and plenty of good olive oil.
