Fresh mushrooms fried with onions

Ingredients for 2 servings:

  • 400 g mushrooms, small
  • 4 m.-sized onion(s)
  • 3 tbsp extra virgin olive oil
  • Paprika powder, sweet
  • salt and pepper
  • Baguette(s), fresh

quick and very easy to make, but absolutely delicious!

Clean the mushrooms. Use a brush to remove any remaining planting substrate, trimming the stems slightly if necessary. Halve or quarter larger mushrooms. Cut the onions into pieces of any size. Heat the olive oil with the onion pieces in a pan and sauté gently over moderate heat, stirring occasionally, until lightly browned. Then dust with paprika powder (about 1 tablespoon is enough), stirring frequently. Add the mushrooms and fry, stirring frequently, until lightly browned. Season with salt and pepper, and sprinkle with a little more paprika powder if desired. Stir several times and continue to sauté briefly; they should not absorb any water. Then check if the mushrooms are cooked enough, serve with fresh baguette, and enjoy. If desired, you can also serve them with sauce, like you might get at a fair, although I can’t provide a recipe for that—I love eating them just with the onions, not swimming in so much oil.
