Ingredients for 4 servings:

  • 400 g pasta
  • salt water
  • 200 g cherry tomatoes
  • 1 onion(s), red
  • 5 spring onions
  • 2 tbsp pine nuts
  • 125 g arugula
  • olive oil
  • Herbs of your choice
  • Spice(s) of your choice
  • ½ lemon(s)
  • 1 pinch(s) of sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 42 minutes

Cook the pasta in salted water according to the package instructions and drain. In the meantime, halve the tomatoes. Finely dice the onions and slice the spring onions. Wash and sort the arugula. Toast the pine nuts and let it cool. For the dressing, juice the lemon and mix with a generous splash of olive oil, herbs, and spices (if you’re in a hurry, just use a bag of salad dressing). Add the drained pasta to the tomatoes and onions, add the dressing, and mix well. Let it cool briefly, then stir in the arugula and pine nuts. Let it sit for 1-2 hours before serving.
