Fried apples with ginger rice

Ingredients for 4 servings:

  • 30 g ginger
  • 200 g rice
  • 1 pinch of sea salt, freshly ground
  • 4 apples, sour, approx. 200 g
  • 60 g cashew nuts
  • 60 g sultanas
  • 150 g apricot jam
  • Fat, for the shape

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 25 minutes

Peel and slice the ginger. Add it to boiling water with the rice and salt and cook according to the package instructions until the rice is tender. Discard the ginger and let the rice cool slightly. Wash the apples, halve them, and generously remove the cores. Place them cut-side up in a greased baking dish. Chop the cashews. Mix with 200g of rice, sultanas, and jam, and spread over the apples. Bake the apples in a preheated oven at 180°C for 40-50 minutes, depending on the apple variety. After 30 minutes, cover with aluminum foil if necessary to prevent the sultanas from overcooking. Serve with vanilla ice cream.
