Apple rice pudding casserole

Ingredients for 3 servings:

  • 500 ml milk
  • 500 g apples
  • 150 g rice pudding
  • 200 g quark
  • 3 eggs
  • 4 tbsp sugar
  • lemon peel
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Bring the rice pudding to a boil with milk, half the sugar, salt, and lemon zest and let it swell. Mix the egg yolk with the quark and the remaining sugar. Peel, core, and finely chop the apples. Mix the cooled rice pudding with the egg quark and the apple pieces. Fold in the stiffly beaten egg whites. Transfer everything to a greased, covered casserole dish. Bake at 200°C for 45 minutes. Serve the casserole with compote, vanilla sauce, or a scoop of vanilla ice cream. It also tastes delicious cold.
