Fried asparagus and peppers

Ingredients for 3 servings:

  • 500 g white asparagus
  • 500 g asparagus, green
  • 1 red bell pepper(s)
  • 1 slice(s) ginger
  • 3 spring onions
  • 125 ml broth (asparagus broth, possibly white wine or vegetable)
  • 2 tsp lemon juice
  • 1 tbsp butter, for frying
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the asparagus and cut into approximately 3-centimeter-long pieces. Cut the bell peppers into similarly long strips. Finely chop the spring onions. Gently heat the butter in a large pan, add the asparagus, bell peppers, spring onions, and ginger, season, and cook over low to medium heat for 15 minutes, stirring occasionally. Add the asparagus broth and lemon juice. Simmer for 5 to 10 minutes (depending on taste).
