Fried banana with maple syrup

Ingredients for 2 servings:

  • 1 vanilla pod(s)
  • 2 bananas
  • 2 tbsp butter
  • 1 tbsp maple syrup
  • 3 tbsp orange juice
  • 4 tbsp lemon juice
  • 2 tbsp brown rum
  • 2 scoops of vanilla ice cream

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Split the vanilla pod lengthwise and scrape out the seeds with a sharp knife. Peel the bananas and halve them lengthwise. Heat the butter, maple syrup, and vanilla seeds in a pan and caramelize until light brown. Carefully toss the banana halves in the caramel. Add the orange and lemon juice, and rum if desired, and bring to a boil briefly. Remove the bananas from the pan, place them on plates, and arrange each one with a scoop of vanilla ice cream. Pour the pan juices over the bananas and serve immediately.
