Fried broccoli Mongolian style

Ingredients for 2 servings:

  • 500 g broccoli
  • 1 tbsp water
  • 7 garlic cloves
  • ½ cm ginger
  • 1 carrot(s)
  • 1 tbsp oyster sauce
  • Salt
  • 2 pointed peppers (if you like)
  • Oil, preferably peanut oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Supplement

A wok or stir-fry pan is recommended. The quantity is based on one preparation as a side dish. If you want this as a main course, you will need to use more. Wash the broccoli and cut it into small florets. Thinly slice the carrot. Finely chop the garlic and ginger (keep the garlic separate). Add the broccoli to boiling water and cook for 1 minute (no longer). Remove from the pot and drain. Heat 3 tablespoons of oil in a wok/skillet. Fry 3/4 of the garlic and the ginger until golden brown. Add the broccoli and carrot (and bell pepper if desired) and stir-fry. Add 1 tablespoon of water (not too much, or it will become mushy). Fry for another 1-2 minutes. Until everything is cooked but still crunchy. Be careful! Be careful, it will get mushy very quickly. Then add the remaining garlic and oyster sauce and season with salt. You can also add other vegetables. I’ve also made it with green asparagus and peppers.
