Fried Brussels sprouts with ginger

Ingredients for 2 servings:

  • 350 g Brussels sprouts
  • ½ tsp ginger, fresh, peeled, very finely diced
  • 1 onion(s), red, peeled
  • 1 garlic clove(s), peeled, finely diced
  • 1 tsp tamarind paste
  • some agave syrup
  • salt and pepper
  • some coconut oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Clean and wash the Brussels sprouts, and slice them thinly. Halve the onion and slice them as well. Heat the coconut oil in a pan, stir-fry the Brussels sprouts, then add the onion and fry until translucent. Finally, add the garlic and ginger and sauté. Dissolve the tamarind paste in four tablespoons of hot water, stir in the agave syrup, add to the vegetables, and cook for a few minutes. The Brussels sprouts should still have some bite. Season with salt and pepper to taste.
