Ingredients for 4 servings:
- 800 g carrot(s), young or winter carrots, cut into 1 cm thick slices
- 1 large onion(s)
- 2 tbsp oil for frying
- 1 bunch parsley, chopped
- salt and pepper
- possibly lemon juice, freshly squeezed

Cook the carrot slices in water until al dente, then drain well. Sauté the onion in the oil until translucent, then add the carrots and parsley. Season with salt and pepper. Sauté for a few minutes until the carrots and onions begin to brown. Tip: If you like, you can drizzle the carrots with a little lemon juice afterward. Serve with millet or rice and a fresh salad.
