Fried cheese balls

Ingredients for 4 servings:

  • e.g. olive oil
  • 2 m.-large egg whites
  • 3 sprigs of parsley
  • ½ bunch chives
  • 120 g Gouda or Manchego
  • 75 g breadcrumbs, fresh
  • some salt and pepper
  • some paprika powder, hot
  • some thyme sprigs for garnishing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Spanish tapas

Heat the olive oil to 180°C. Meanwhile, in a bowl, beat the egg whites until stiff peaks form, but do not allow them to become too stiff. Wash the herbs, shake them dry, and chop them finely. Finely grate the cheese. Add to the egg whites along with the breadcrumbs and chopped herbs and gently fold in. Season the mixture with salt, pepper, and paprika. Using two teaspoons or disposable gloves, scoop or form walnut-sized balls from the mixture. Immediately add to the hot olive oil and fry for about 3 minutes until golden brown. Remove from the pan, drain on kitchen paper, and serve garnished with the thyme.
