easy and fast – like from an Asian

Mix flour, cornstarch, and baking powder with water and a tablespoon of oil to form a smooth batter. Cut and season the chicken breast as needed. Heat the oil in a small saucepan or suitable frying pan. Add the meat to the batter, ideally using a fork to pull it through the batter so that as much batter as possible sticks. Carefully place it in the hot oil and cook until the batter is evenly golden brown. Remove from the oil and place on kitchen paper to absorb any excess fat. Serve with sides such as rice or Asian noodles.
