Fried cucumber with Icelandic cream cheese dressing

Ingredients for 2 servings:

  • ½ cucumber(s)
  • 1 tbsp oil
  • 50 g Skyr (Icelandic cream cheese)
  • 1 dashes vinegar
  • e.g. salt and pepper
  • e.g. fresh, chopped herbs, e.g. chives, parsley.

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Wash the cucumber, slice it thinly, and fry it in a little oil. Let it cool and arrange it fan-shaped on plates. Mix the dressing and spoon it into the center.
