Fried Eggplant Slices

The perfect fried eggplant slices recipe with a picture and simple step-by-step instructions.

  • 250 g 1 Aubergine
  • Coarse sea salt from the mill
  • 75 g Flour
  • 1 Egg
  • 75 g Breadcrumbs
  • 75 g Desiccated coconut
  • 100 ml Peanut oil
  • Paper towels
  1. Wash the aubergine, pat dry with kitchen paper and cut into slices (approx. 1 – 1.5 cm thick). Season the aubergine slices vigorously with coarse sea salt from the mill, let stand / steep for a while and wipe off the salt with kitchen paper. Beat the egg and whisk well. Mix the breadcrumbs with the desiccated coconut. Bread the aubergine slices (flour, egg and breadcrumbs + desiccated coconut), fry them on both sides in a pan with peanut oil and degrease on kitchen paper. Keep warm in the oven at 50 ° C until serving.
