Ingredients for 4 servings:

  • 60 ml olive oil
  • 1 onion(s), finely chopped
  • 1 stalk(s) celery, finely chopped
  • 1 carrot(s), finely chopped
  • 400 g tomatoes, chunky, from the can
  • 2 tbsp tomatoes, pureed
  • ¼ tsp oregano, dried
  • ½ tsp sugar
  • 50 g white bread, from the previous day
  • salt, pepper
  • 500 g fish fillet(s), white, e.g. cod
  • 3 tbsp parsley, chopped
  • 1 tbsp lemon juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Pasari Plaki

Preheat oven to 180°C. Heat 2 tablespoons of oil in a pan. Add the onions, celery, and carrots and fry for 10 minutes over low heat. Add the garlic and fry for 2 minutes. Add the tomatoes, oregano, and sugar and simmer for about 10 minutes, stirring occasionally, until the sauce thickens. Season with salt and pepper. Chop the bread in a food processor until finely crumbled. Place the fish in a baking dish. Stir the parsley and lemon juice into the sauce, season to taste, and pour over the fish. Sprinkle with the breadcrumbs and drizzle with the remaining oil. Bake for about 20 minutes, until the fish is cooked through.
