Potato-endive puree

Ingredients for 4 servings:

  • 1 kg potatoes
  • Salt
  • ¼ head of lettuce (endive)
  • ¼ liter of milk
  • 50 g butter
  • pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash and peel the potatoes, then halve them and cook in a little salted water until soft. Trim and wash the endive, cut into strips, and drain. Bring the milk to a boil. Drain the potatoes and mash them. Stir the butter and milk into the hot potatoes. Season with pepper and nutmeg. Stir in the endive strips and serve immediately.
