Fried kohlrabi

Ingredients for 2 servings:

  • 3 kohlrabi bulbs, with the tender green
  • 1 m.-sized onion(s)
  • 120 g diced ham
  • 1 tbsp oil (safflower oil)
  • 2 pinches of nutmeg
  • n. B. Salt and pepper, from the mill
  • 2 eggs, XL

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

with fried eggs

Peel the kohlrabi (reserve the tender green part), cut into small cubes, and fry in a non-stick pan with a tablespoon of safflower oil. Peel the onion and finely dice it. After about 10 minutes, add it to the kohlrabi vegetables along with the ham and continue frying over medium heat, turning occasionally. Finely chop the kohlrabi greens. Fry the eggs in another pan until fried. Season the kohlrabi vegetables generously with salt, pepper, and nutmeg. Sprinkle the fried eggs with the kohlrabi vegetables and greens. Serve with foil-wrapped or boiled potatoes.
