Sambal – chicken with sweet potatoes

Ingredients for 2 servings:

  • 1 large sweet potato(s), approx. 350 g
  • 2 large chicken thighs
  • 2 tbsp olive oil
  • Salt
  • ½ orange(s), untreated, peel
  • 2 garlic cloves, chopped
  • 2 tbsp sambal oelek
  • 1 tbsp Dijon mustard
  • 60 ml honey, use strong
  • 2 sprigs of mint

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Wash the potatoes thoroughly and quarter them lengthwise. Halve the chicken thighs at the joint. Place the thighs and potatoes separately in two aluminum foil trays on a baking sheet. Brush the potatoes with olive oil and season with salt. Cook in a preheated oven on the middle rack at 200°C for 45 minutes (convection not suitable). Mix the orange zest and garlic with the sambal oelek, mustard, honey, and a pinch of salt until smooth. After 30 minutes of cooking, brush the chicken with about 1/3 of the sambal sauce. You can use the fan-assisted oven or the grill function for the last 5 minutes to crisp the skin. Finely chop a few mint leaves and mix them with the remaining sambal sauce. Arrange the thighs with the sweet potatoes and a few mint leaves. Serve with the sauce.
