Fried leek noodles

Ingredients for 4 servings:

  • 250 g ribbon noodles (Chinese mie ribbon noodles)
  • 1 kg leek
  • 4 shallots, finely diced
  • 2 garlic cloves, finely diced
  • 3 tbsp vegetable oil
  • 5 tbsp soy sauce
  • 1 tsp oil (dark sesame oil or 1 tbsp walnut oil)
  • 100 g peanuts or cashew nuts, roughly chopped
  • ½ bunch chives, chopped 1 cm long
  • pepper
  • possibly salt

Working time approx. 30 minutes; Total time approx. 30 minutes

Asian-style noodles

Cook the tagliatelle noodles in salted water according to the package instructions until almost tender and drain well in a colander. Trim the leek and slice into thin rings. Fry the leek with shallots and garlic in hot vegetable oil for 3 minutes. Add the drained noodles and fry for about 5 minutes, stirring constantly. Season with soy sauce, sesame oil, pepper, and salt, if desired. Mix in the chopped nuts and chopped chives. Serve immediately. Tips: If you like it a bit spicy, add 1-2 teaspoons of sambal oelek or red Thai curry paste along with the spices. If you prefer meat, you can fry strips of pork or chicken, season with soy sauce, and stir in at the end. Vegans should make sure to buy egg-free mie noodles.
