Ingredients for 2 servings:
- 7 large potatoes
- 1 medium-sized onion(s), diced
- 150 g butter
- some salt and pepper
- nutmeg
- 2 cups sour milk
Instructions

Franconian, ‘Semmete’
Peel the potatoes and cook for about 20 minutes until tender. Drain, mash, and season with salt, pepper, and nutmeg. Heat half the butter in a pan and fry the onions until translucent. Add the mashed potatoes, mix well with the onions, and spread them out flat in the pan. Cook the mashed potatoes over medium heat until brown and crispy on one side, then flip them, add the remaining butter, and fry the other side until brown and crispy. Serve the fried mashed potatoes (my grandma calls them “Semmete” in Franconia) with sour milk.
