Ingredients for 4 servings:
- 1 kg herring(s), cleaned and ready to cook
- 3 tbsp mustard, medium hot
- 1 tbsp mustard, hot
- 2 tbsp, heaped parsley, freshly chopped
- 125 g beer or white wine
- 125 g flour
- 1 egg(s), separated
- Salt
- Sugar
- Oil for frying
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 25 minutes
Fillet the herring. Mix the mustard with the parsley, lightly salt the fillets, and coat them with the mustard mixture. Let them stand for about 1 hour. Mix the beer or wine with the flour and egg yolk, and season with salt and sugar. Beat the egg whites until stiff peaks form and fold into the batter. Preheat the deep fryer to 180°C, dip the herring fillets in the batter, and fry in the hot oil for about 2 minutes. Serve with warm potato salad.
