Kimchi soup with fish

Ingredients for 2 servings:

  • 2 tbsp sesame oil
  • 50 g onion(s), cut into strips
  • 400 g kimchi, homemade, with various vegetables
  • 200 g fish fillet(s), of your choice
  • 2 cloves garlic, very finely chopped
  • 1 tsp, heaped ginger, freshly grated
  • e.g. vegetable broth
  • some soy sauce, light
  • some fish sauce
  • some chili flakes if needed
  • 2 tbsp, heaped garlic chives, cut into rolls, or regular chives

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash the fish fillet, dry it, and cut it into bite-sized pieces. Heat the oil and fry the onion strips until they begin to brown. Add the kimchi with some of its own liquid. Stir in the garlic and ginger and add vegetable stock until the kimchi is just covered. Bring to a boil and season with soy sauce, fish sauce, and chili, if desired. Carefully add the fish pieces to the soup and simmer gently for about 1-2 minutes. Ladle onto plates and sprinkle with chives. Serve with flatbread or rice.
