Ingredients for 2 servings:
- 250 g tagliatelle pasta, wide
- 1 onion(s)
- 1 tbsp butter
- 1 tbsp sunflower oil
- 2 eggs
- ½ tbsp salt
- ½ tbsp pepper
- 1 pinch of nutmeg
- Chives in rolls, as desired

simple, quick and delicious
Cook the pasta according to the package instructions until al dente. If you’re in a hurry on the day you want to prepare it, you can do this the day before – just rinse the pasta in cold water, drain well, and refrigerate. Dice the onion and sauté in a pan with the butter and olive oil until translucent. Add the pasta and fry until golden brown, turning frequently. Just before the end of cooking, crack the eggs directly into the pan, let them set briefly, and then turn again. Sprinkle with fresh chives, if desired. Serve with a green salad or beetroot salad.
